Why does a princess cost less per carat?

Because it wastes less rough. Cutting a round from an octahedral crystal discards roughly half the material; a princess follows the crystal's natural form far more closely. The saving is smaller for lab grown stones than mined ones, but it still shows in the price.

What is the main thing to watch?

The four corners. They are the sharpest points on any common diamond shape and the most likely to chip if exposed. A princess should always be set with prongs covering all four corners, or set flush in a bezel.
