Is a bezel setting really more secure than prongs?

Yes, it is the most secure setting made. The metal wall surrounds the stone completely, so there are no prong tips to wear down or catch.

Does a bezel hide too much of the diamond?

It covers only the outer rim. A well-made bezel actually frames the stone and can make it appear slightly larger, like a border on a photograph.
